I am such a sucker for simple comfort foods. And I have this weird fetish of blending two meals into one. And I LOVE sloppy joes. It was such a staple in my family household when I was little – it was just so easy to make, and it was like having a ground up messy, saucy, sloppy burger. And the idea occurred to me: sloppy joes and biscuits – how those would make for great combinations. But then I had the idea as to how to make sloppy joes a little less…sloppy. And that is how the sloppy joe cheddar biscuit calzone was born.
This idea is great for party finger foods, family meal night, or if you have little messy eaters in the household. Your kids will love them, and they are sure to be on the easy meal night hot list.
1 package of 8 jumbo buttermilk biscuits (not the flakey kind)
1 lb. ground beef
1 6oz. can tomato paste
1 cup sharp cheddar cheese
Spices for taste (optional):Â 1 tbsp of each
Salt
Pepper
Chili powder
Garlic powder
Paprika
Instructions
Start by browning your ground beef in a skillet. Then add the tomato paste and seasonings once the meat has fully cooked. If the mixture is too thick, simply add a small amount of water to it.
Shred up 1 cup of sharp cheddar cheese. You can even do pepper jack, colby jack or specialty cheeses with jalapeno or smokey flavors. Set the cheese to the side in a bowl.
With your grands biscuits, gently flatten them with your hands as you would pizza dough. Do not flatten on surfaces - they easily stick even if using oil/spray. Flattened, each biscuit should be approximately 3 inches wide for the meat mixture.
Dollop a small amount of the beef onto the center of the biscuit, then top with a pinch of the shredded cheddar cheese. The amount of the meat mixture you use is dependent upon how large your flattened biscuit is. Do not try to over-pack it.
You are then going to fold one end of the biscuit over the meat into a calzone shape, pinching the ends of the biscuit that meet. If their not completely pinched together, the folds will open slightly (which is OK, since that always happens to a few of mine), that is why you don't want to over-stuff them and the meat mixture will not fall out. You can even try sealing the edges together by pressing them down with a fork.
Brush melted butter over the tops of each biscuit (optional).
Pre heat the oven to 350F and bake for approximately 15-20 minutes or until the edges and tops are golden brown.
