There are two things I love almost more than pickles and chocolate (I know, interesting combo), and that is pasta and spinach artichoke dip. Truth be told, I have spent the last decade (at least) concocting the perfect spinach artichoke dip. Now that I finally got it nailed down to the wire, I have been inspired by incorporating it in other dishes.
It all started when my husband scoffed at me in saying he was bored of our same old weeknight spaghetti. I laughed it off for days thinking he was only joking. I mean, seriously – who in the right mind could get tired of such a classic? So, I did what any sane wife would do – I went with plan B and challenged him with spinach artichoke dip pasta.
Plan A would have been unlawful, anyway. I’m kidding.
This recipe is nothing short of comfort food – it’s thick, creamy homemade sauce and just the right amount of cheesy, salty goodness will make you want to snuggle up on the couch with bowl and your favorite Friday night flick. Plus, think family-friendly weeknight meals and work lunch leftovers (best to hide this one in the back of the fridge from your co-workers). This creamy skillet spinach artichoke dip pasta is ready and on the table to enjoy in less than 30 minutes.

Ingredients
1 box of Bucatini, Spaghetti OR Fettuccine pasta 1 block of cream cheese 16 oz. light sour cream 1 cup of milk 1 cup of artichoke hearts 1/2 cup chopped fresh parsley 1/2 chopped white onion 1 chopped garlic clove 3 1/2 cups chopped fresh spinach (or 1 package frozen) 1/3 cup freshly graded Romano 1/3 cup freshly graded Parmesan 1 tsp of salt and pepper to taste
Instructions
NOTE:with 1 box of pasta, this recipe serves 6. The amounts of the listed ingredients suit well with 3-6 servings. If you are preparing less than 3 servings of pasta, it is recommended to cut up to half the amount of listed ingredients (depending on your desired level of recipe creaminess).
Prepare a large pot of water to boil and a large deep skillet on a medium-low heat.
In the meantime, chop up your onion, spinach, garlic, parsley and artichoke hearts. You can also grade your Romano and Parmesan cheese ahead of time at this point and set aside.
Start by lightly sauteing your onions and garlic in the skillet for 2-3 minutes, then bring down heat to low. Place the cream cheese, sour cream and milk into the skillet and lightly stir until blended and incorporated.
Add in your chopped spinach, parsley and artichoke hearts as well as salt and pepper to taste. At this point your pot should be at a boil to add the box of pasta. For that authentic "Al dente", cook pasta for 7 minutes. Perform a taste test if needed.
During that time, add in that extra touch of love. Rather, stir your freshly graded Romano and Parmesan into the sauce and allow to simmer on low heat.
Once pasta is done, strain and pour into the skillet. Gently toss and fold pasta into the spinach artichoke sauce.
(Optional) Sprinkle a touch more freshly graded Romano and parsley on top.
