Banana Chocolate Chip Oatmeal Breakfast Bars

Ingredients
  

  • 3 Cups Old fashioned oats
  • 2 Ripe bananas
  • 1/4 Cup Packed brown sugar
  • 1 Cup Chocolate Chips
  • 1 1/2 Tsp Baking powder
  • 1 Cup Chopped or slivered Almonds
  • 1/2 Cup Chia seeds
  • 1 Tsp Vanilla extract
  • 2 Tbsp Honey

Instructions
 

  • Start by buttering or oiling the bottom and sides of a 9inch casserole dish or cast iron skillet. This will help keep the contents from sticking and create a nice crust on the edges.
  • Preheat oven to 350F and bring a pot with 3 1/2 cups of water to a boil.
  • Cook down your oats. If you accidentally cook them too dry, just simply add in a bit more water (or you can even use Almond milk for a little more added sweetness).
  • In a large mixing bowl, mash up the bananas with a fork. Add in the cooked oats, brown sugar, chia seeds, chopped/slivered almonds, vanilla, honey and baking powder. Mix together thoroughly.
  • (Optional) Set the bowl in the fridge for up to 15 minutes for everything to cool before adding the chocolate chips. The heat will cause them to melt - unless that's your thing, then by all means skip this step.
  • Add in the chocolate chips to the mixture before placing in your casserole dish. You may sprinkle more chips on top thereafter.
  • Bake for 30 minutes and wait to cool before serving.
