Ingredients

  • 1/2 Pound Lean ground beef Or substitute with chicken, pork, etc.
  • 3 Cups Tomato Juice Or crushed tomatoes, chili starter, etc.
  • 1 1/2 Cups Beef broth *Optional, if you prefer your chili a lot thicker
  • 2 Ears Sweet corn Frozen or even canned works, too!
  • 1 Medium/Large green pepper (diced)
  • 1 Small White or yellow onion (diced)
  • 1 Small Tomato (diced) *Optional - this is if you used tomato juice.
  • 1/3 Cup Chili or pinto beans
  • 2 Tbsp BBQ sauce Gives it a nice smokey flavor!
  • 2 Tsp Chili, onion, garlic powder and paprika + Cayenne if you like a little spice!
  • Salt and pepper (to taste - about ~1 tsp of each)

Instructions

  • Start by browning the beef about 60% of the way before adding your green peppers, onions and corn. You can do this in a skillet or in a pot - to keep this easy I would simply do it in the pot you're going to be using to simmer the chili.
You can also cook the beef all the way and set aside in another bowl if you prefer to cook your veggies separate.
  • You want to brown the veggies without overcooking or burning them, so do this on medium heat. Then add your ingredients together in the pot as well as tomato juice (or crushed tomatoes), broth, BBQ sauce, beans and spices and allow to reach a slow rolling boil on medium heat. Then be sure to turn it down to a medium/low heat so it doesn't burn the bottom!
  • Simmer your chili (stirring frequently) for the remainder of time, so usually 15 minutes. *The key is that your ingredients are over 75% of the way cooked by the time you add your stock.
  • Serve with your favorite condiments - like avocados, tortilla strips, cheddar cheese, cilantro or parsley.
