These delicious beef burrito bowls are so easy to make, you’ll add them to your quick and easy weekly meal plan. My husband asks for this every week, or more than that if he could.
There’s nothing quicker to make if you have ground beef already cooked, or to whip up some ground beef in a pan with rice and a few toppings. In 30 or less minutes you’ll be eating a healthy dinnertime meal.
This is even great for meal prep during the week because you can have all the necessary items already prepped and made to simply apply the day you’re going to eat it.
Easiest Beef Burrito Bowls
Servings: 4 Prep Time: 15mins Cook Time: 20mins Difficulty: Easy
1 lb. ground beef
1 box Spanish/Mexican rice or Quinoa
Cumin spice, Chili Powder spice, Garlic Powder spice to taste
Romaine Lettuce, Spinach or even Arugula (if you like a bitter bite, yum!)
Sharp Cheddar Cheese (Try Pepper Jack, too – adds a great spicy flavor)
Salsa (or chopped up tomatoes and cilantro for a fast DIY salsa that tastes great!)
Start a pot of boiling water for the rice or quinoa. Add the rice when the water comes to a boil then turn down to a simmer. Depending on rice or quinoa it could take roughly 10-25 minutes for some versions of rice. If the rice or quinoa comes with a spice packet, you can add it now or later when its fully cooked – doesn’t matter.
As the rice simmers, cook the ground beef in a large skillet. When the beef is almost fully cooked, add the Cumin, Chili Powder, and Garlic Powder spice for taste. Let the beef simmer on low while the rice finishes.
Here you can start shredding your cheese (For 2 bowls that serve 2 people I shredded 1 cup of cheese, plus I like A LOT of cheese), chop your lettuce (if you even need to – Publix and Walmart sell pre shredded romaine lettuce in their produce sections), and tomatoes if you are going the DIY route of salsa. I usually use a jar or container of salsa or guacamole already made from the grocery store. It makes for quicker mealtime.
When the rice is fully cooked, you can pour it into the beef skillet. Mix the beef and rice thoroughly.
Add beef and rice mixture to a bowl first, then add your toppings how you like! There are so many options to making this your favorite tasty meal and its SO EASY. It is literally a burrito without the extra carbs of a wrap.
